- 1 (3 ½ lb. size) broiler/fryer chicken, skin removed and cut up
- 2 medium tomatoes, chopped
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 bay leaf
- 2 tsp. salt
- 1 tsp. dried thyme
- ¼ tsp. pepper
- 2 cups broccoli florets
- Rinse chicken and place in slow cooker.
- Pour tomatoes, onion, and garlic into slow cooker.
- Combine broth, bay leaf, salt, pepper and thyme and pour over chicken.
- Cover and cook on low for 7 to 8 hours.
- Add broccoli and cook 45-60 minutes longer or until chicken juices run clear and broccoli is tender. Remove bay leaf.
